TERROIR

Our vines get the perfect amount of heat, sunlight, water, nutrients and carbon dioxide that are necessary natural assets to produce the finest quality grapes. Volcanic soil substrates add uniqueness to taste and aroma.

  • Our vineyards are located at the north of the lake Balaton, enveloped by volcanic mountains, and facing equator at the latitude of 46° north, thus facing optimal sunlight and providing right amount of dormant period in winter for vines to rest and recover. We get medium continentality with moderate differences in seasonal temperatures suitable for nine grape varieties that we grow.

  • The lake Balaton, also known as the Hungarian Sea and the largest lake in central Europe, plays important role in regulating wind, water, rain, sun and other climatic conditions around volcanic mountain hills. We get sub-mediterranean climate. In driest summer months, we get a little more rainfall. So, our grape plantations never have to be watered as they always have natural mineral-rich water to drink.

  • Nurtured in rich volcanic soil of Balaton, our vineyards produce notedly flavorsome, high minerality wines. Our volcanic red clay soil, with loam texture, drains well and absorbs and reradiates sun heat. Good drainage means our soil require less energy to warm up and our vines must dip their toes deeper to get water infused with richer mineral contents. With less water content and darker color, our vineyard soil absorbs and reflects sun heat to ripen grapes in the growing season, but it ripens slowly due to micro-climatic cooling conditions.

  • We are on south facing slopes to receive more sunlight and the most warmth. The highest point of our vineyard at altitude of 550ft and the lowest point being at 400ft facing the national forest provide a range of micro-climate while naturally controlling insect pests, hence defining our truly unique terroir characteristics.

  • Enchanting mystical fog develops around the lower altitude area of our vineyard when cool breeze rolls down from mountain and meets warmer wind from the lake and national forest. This boosts the supply of cool air and refreshes the grapes with moisture, so they maintain aromas and acidity.

TRADITION

Tradition is an integral part of our winemaking process and deeply embedded into our core values of doing business, despite our tremendous focus on progress, technological advances, upgrades and daily improvements.

  • Wine remains wine with happy lasting memories when we connect with wisdom of tradition and thousand years of custom and culture passed down generations after generation. Badacsony region of Hungary has 1500 years of rich tradition of winemaking. We are proud to adopt them, cherish them, but never carry them as a burden into future.

  • Keeping up with local seasonal celebratory traditions and juxtaposing our bio-dynamic and vegan practices, we add some flair and observe days to remember fruits of life. We together with local communities celebrate root days in late winter for pruning, flower days in spring with new hope in new lunar year, leaf days in summer for sailing and connecting, and fruit days in autumn for harvesting. We do not do countdown for winter dormancy at our vineyard but when it arrives every year, we have reason to lit up our winery for guests and let them indulge in delicious wines or sample new fresh wines.

  • The human factor plays an important role in grape cultivation, winemaking and the quality of wine. We do our rituals yearlong from pruning to handpicking of grapes; we listen to previous generations for in-depth knowledge of terroir; we dial-in our vines and the land to receive messages; and we adopt the practices most suitable for making wines that reflect the terroir from which they originate.

  • Tradition of working in harmony with nature is a key part of our philosophy on sustainability and caring for the environment. Ideally located at foothills of Nemesgulács, flanked by the national park and fronted by the Lake Balaton, our winery and vineyard are surrounded by trees, bees and botanical rarities alive with wild birds. Thanks to these surroundings, we are continually reminded of the environment and our need to respect it.

  • We are a traditional spiritual forward-looking family with a big F. Where tradition and advancement intersect is a topic of conversation. Our estate does not have any gates. Our winery doors are always open. Come and join us. Make some memories. Cheers!

TECHNOLOGY

Modern technology helps transform the terroir characteristics, our passion, and winemaker’s personal artistic expression into wines we all love. With technology, we always look forward, stay current and remain sustainable.

  • From vineyard management, harvest, winemaking, bottling, labelling to daily operations and relationships, we deploy the most advanced technology to solve our problems by working with several technology partners locally or globally. It lets us be creative, productive, successful and sustainable.

  • Every year when mother nature provides us grapes with some variations in aromas, organic acids, sugar, phenolic compounds, minerals, nitrogenous compounds and pectic substances, some of them more volatile and some less, we make choices to deliver outstanding quality of wines. We consult our technological systems to make those choices. Our technology allows us to control and act upon hundreds of parameters during pre-fermentation and fermentation to transfer perfect balance and intensity of terroir characteristics into our wines. Throughout the winemaking process until bottle packaging into boxes, we monitor over 800 parameters at different frequencies and make decisions.

  • We follow Bio-dynamic practices and we make vegan wines meaning animal products are not used at any step in the winemaking process. This doesn’t mean we time-travel back to stone age abandoning the technological advances humans have made. We simply pick the best practices. Technology provides us ability to be efficient in harmony with ecology and to keep higher quality taste and aroma profile of our wines.

  • Our winery is engineered to make positive environmental impact. We optimise energy usage through intelligent energy management for fluid flow, pressure, temperature, electricity. We harness rainwater and recycle 100% of our waste. Throughout the entire production process, our goal is to be as friendly to our environment as possible. Modern engineering systems help us achieve this goal.

TECHNIQUES

We keep the best and reinvent the rest. Our winemaking techniques take the best out of everything from terroir by combining tradition and technology to make balanced high-quality wines some of which are often described as the god of wines and the wine of gods.

  • We push the boundaries of winemaking through a creative mix of cultural traditions, flavour combinations, personal preferences and innovative ways of thinking. Our aim is always to make awesome balanced high-quality sparkling and still wines that surprises and delights our customers.

  • Perfect balance of acidity, sugar, aroma, tannins etc is at the heart of every great wine. Decisions have to be made from the start in the vineyard and continue throughout the winemaking process. Mother nature is one unreliable lady. But we have leant our art and we have modern technology that allows us to make hundreds of decisions quickly and vary our production techniques in order to make a broad range of terroir wines of endless styles.

  • Whether its indulgent rich opulent decadent sinfully yummy our red wines or fresh vibrant balanced crisp our unique aromatic white wines or elegant delicate our rosé wines, we maintain less interventionist approach to winemaking in tune with our philosophy and the conditions of the vintage. We say no to no artificial acidification, fortification, sugar adjustments.

  • Our sparkling wines are made using the intricate Traditional Method, the same method as Champagne, where the bubbles occur naturally within the bottle. We produce a variety of styles from the youthful and vibrant Brut NV, to the more mature and complex Three Ivy which is aged for four years before release.
